Breakfast casserole

Who doesn't love breakfast food??  There are so many different ways you can make eggs and then there is pancakes, waffles, sausage, bacon, toast, french toast, fruit, biscuits and gravy....and so many more!  We love to have breakfast for dinner probably every other week.  I think that is mostly because AJ and I usually have our shake for breakfast, which I love but that means I don't get all of that other yummy breakfast food.

At church we rotate who brings in breakfast for our small group.  I always try to make something healthy and then a little something sweet.  A couple of weeks ago I brought in an egg casserole and breakfast cookies that went over well and disappeared except for these 2 pieces that I got a picture of (after I took a bite!)

These egg casseroles are super easy to make and you can make it ahead of time if you need to.  You can easily reheat it or its even good cold :)


This one was thrown together pretty quickly and I used what I had on hand.  You can add any kind of protein or veggies you wanted and it would be delicious, but this simple combination was easy and delicious.

Preheat your oven to 375 degrees
Brown your breakfast sausage (I use Jennie-O turkey)
Place it in the bottom of a 9x13 dish
Dice up tomatoes into bite size pieces and layer over the top of the sausage
Shred Colby Jack cheese and sprinkle generously over the top of the sausage and tomatoes
Beat 11 eggs and season with salt and pepper (that is all I had, I'm sure 12 would be good too!)
Pour eggs over the top and season with Italian Seasoning and Parsley
Bake for 40 minutes
Let cool for a couple minutes to set and then serve warm.  Enjoy!

Happy Holidays!

It has been a glorious 5 days off work and time spent with the family!  We normally travel for the holidays, but we had been traveling so much we decided to stay home and have Thanksgiving.  Our neighbor invited us over to join their family so I didn't have to make a big meal for the 4 of us - plus AJ said he would rather go out to eat than make a big meal that may get wasted.  So I accepted the invitation ๐Ÿ˜Š I did make some pies, chocolate chip cookies and a green bean casserole to bring over ๐Ÿ˜ฑ I did quite well with my eating and only had a little piece of cherry pie and pumpkin pie!  I told myself I wasn't going to have any, but I only eat pumpkin pie once a year so I couldn't resist myself! Chocolate protein bars

This is one of my most favorite recipes that I have adapted to fit our families needs and make on a weekly basis.  It provides protein and carbs to keep you full and satisfied for the morning!   Our kids literally have this breakfast every day and if I don't have them made, the kids are quite upset. They call them chocolate bars but that's very deceiving because there's not really much chocolate in it! These take 10 minutes max to make and then time in the fridge to set.  1+ cup natural peanut butter (I like Skippy) 1 cup local honey (for allergy sakes!) 1 1/3 cup oatmeal 3 scoops chocolate protein powder (I use Orgain) 1 scoop chocolate Shakeology (if you don't have this, just do 5 scoops of protein powder) Then I dump in some flax seeds and chia seeds - not measured Heat peanut butter and honey on stove together.  Add in your other ingredients and mix well Spread in a container (I use a 9x13 Pyrex).
