Homemade Chicken Nuggets

I love chicken nuggets!!  When I used to go to McDonalds it was what I got probably 75% of the time!  They are just amazing.  And the sweet and sour dipping sauce...oh so good! 😋 But now that I don't eat at McDonalds anymore, I have to make them at home.  There are so many you can buy at the store - quick and easy to throw in the oven and they have all kinds of different shapes - dinosaurs, stars, hearts, probably whatever you wanted! But who knows what the heck is in those store bought ones....so I had to find a recipe that I could make at home.  I have come across many that I like but I always wanted them to be crispy and not soggy when I make them in the oven.  It has taken some time, but I think I have found the right combination!!  YES!! Cookie dough balls

I saw this picture of what looked like cookie dough on my friends facebook page - she said she made it with Shakeology!  It absolutely looked amazing in the bowl, just like cookie dough.  And then she rolled it into balls for a quick snack - or in my kids case, BREAKFAST 😊 I modified her recipe a little bit and according to my husband I need to modify it a little bit more.  I thought they were good and the kids scarfed them down.  I guess if you don't like coconut at all, then you need to modify it as well - I'll tell you how I intend to but I can't promise anything at this point! Breakfast cookies

Cookies for breakfast?!  Yes please!!  Remember Sunday I posted my breakfast casserole that I brought to church, these are the breakfast cookies - honestly I didn't even get to try them because they were all eaten before I had chance which is usually once we get back home. What makes a breakfast cookie you ask?  I'm not really sure 😁 but these qualify because they have oats (you know like oatmeal!) in them.  So I think that makes them acceptable for breakfast!  I'm sure I'll need to make them for my kids after they've seen this picture! Recipe: 1 cup natural peanut butter (although probably 1/8 was almond butter) 1/2 cup + 2 tbsp oats 2 tbsp honey  4 tbsp brown sugar  1 egg 2 tsp vanilla  1/8 tsp salt  1 tsp baking soda  1/2 cup chocolate chips (I used dark chocolate, but you can do a mix of peanut and chocolate chips, raisins, cessions, peanuts, etc) Preheat oven to 350.  In medium sized bowl mix together peanut butter, honey and brown su

Breakfast casserole

Who doesn't love breakfast food??  There are so many different ways you can make eggs and then there is pancakes, waffles, sausage, bacon, toast, french toast, fruit, biscuits and gravy....and so many more!  We love to have breakfast for dinner probably every other week.  I think that is mostly because AJ and I usually have our shake for breakfast, which I love but that means I don't get all of that other yummy breakfast food. At church we rotate who brings in breakfast for our small group.  I always try to make something healthy and then a little something sweet.  A couple of weeks ago I brought in an egg casserole and breakfast cookies that went over well and disappeared except for these 2 pieces that I got a picture of (after I took a bite!) These egg casseroles are super easy to make and you can make it ahead of time if you need to.  You can easily reheat it or its even good cold :) This one was thrown together pretty quickly and I used what I had on hand.
It's January and we all make resolutions to be healthier or lose weight right?? But who the heck has time to go to the gym when you have kids!?! They definitely make it tough, but it is doable - just make sure you can get to the gym during childcare hours after you get home from work and before you make dinner and get home in time to give the kids baths and do homework....you know the story. BLAH, BLAH, BLAH WE JUST DON'T HAVE TIME!! But what if you could workout at home after the kids go to bed or before they get up or when they are taking their baths! Venison Chili

I do believe that winter is officially here, much to my dismay 😄 I am pretty sure as I get older every year, I hate the cold more and more.  I did not used to mind the cold, and I still don't as long as there is snow on the ground.  Why else would it need to be so cold??? Anyway, when cold hits, I want as much warm food as I can get - chili, soups, stews, roasts.  Anything I can make in the crockpot is amazing!  We came back from Christmas with a lot of meat - our freezer is full!  And now we need to use it up making as many delicious foods as we can with our, straight from the butcher, meat!   If you didn't know, AJ is a hunter - but he really only hunts deer.  This year his dad got some ground venison and mixed it with pork.  Wow!! It is really good!  I am not a big fan of venison in general, but this combo turned out really yummy!  So we decided to make some chili with it and it was amazing!  According to AJ it was the best chili we've ever made 😋

Core de Force rocked my world

So you all know I was doing a new workout program last month, right?  Well it completely changed me in more ways than just physical. I discovered I CAN do different workouts and like them, even when they are hard and not something I'm used to.  I had to learn new moves and feel uncomfortable doing them.  They weren't my normal squats, lunges and burpees.  I had to learn to throw punches and kicks!  It was way out of my comfort zone! I discovered I CAN follow a meal plan, even during the holidays when there are sweets around me.  I just have to plan ahead and follow through.  I learned that meal prepping is key to me staying on track, but I can do it in an hour or so one day a week and that makes my whole week easier! I discovered that I need my personal development to get me through those tough days when the workouts were longer and I wasn't sure if I was going to make it.  Personal development keeps my mind strong, makes me tell myself that I can do anything! P
