Homemade Chicken Nuggets

I love chicken nuggets!!  When I used to go to McDonalds it was what I got probably 75% of the time!  They are just amazing.  And the sweet and sour dipping sauce...oh so good! 😋


But now that I don't eat at McDonalds anymore, I have to make them at home.  There are so many you can buy at the store - quick and easy to throw in the oven and they have all kinds of different shapes - dinosaurs, stars, hearts, probably whatever you wanted!

But who knows what the heck is in those store bought ones....so I had to find a recipe that I could make at home.  I have come across many that I like but I always wanted them to be crispy and not soggy when I make them in the oven.  It has taken some time, but I think I have found the right combination!!  YES!!

So here we go.  I hope you all enjoy them as much as we do!

You will need:
4 chicken breasts
1 cup pickle juice (yes really)
1 cup flour
paprika
pepper
3 eggs
1 1/2 cups bread crumbs

Directions:
Cut up chicken into your desired size for nuggets or strips
Soak these pieces in pickle juice for at least 30 minutes, the longer the better



Get 3 bowls and place flour, paprika and pepper in one, 3 beaten eggs in another and breadcrumbs in the last one

Take chicken pieces out of the pickle juice as you use them, don't drain it.  Place the chicken into the flour, coat well and then shake the excess off.  Without dragging extra flour into the the egg, coat in egg and then the breadcrumbs.  Shake off any excess after each dip.


Place into 9x13 pyrex or cookie sheet.  Bake at 400 degrees for 20 minutes, turning once halfway through.  Broil on hi for 2 minutes

Make some homemade fries or sweet potato fries, greens or other veggie and enjoy!  The kids and husband devoured it.  And I had leftovers for 2 lunches!!

Happy Holidays!

It has been a glorious 5 days off work and time spent with the family!  We normally travel for the holidays, but we had been traveling so much we decided to stay home and have Thanksgiving.  Our neighbor invited us over to join their family so I didn't have to make a big meal for the 4 of us - plus AJ said he would rather go out to eat than make a big meal that may get wasted.  So I accepted the invitation 😊 I did make some pies, chocolate chip cookies and a green bean casserole to bring over 😱 I did quite well with my eating and only had a little piece of cherry pie and pumpkin pie!  I told myself I wasn't going to have any, but I only eat pumpkin pie once a year so I couldn't resist myself!
