Bacon Cheeseburger Skillet

Remember I told you last week that I had made some new meals we loved? Well I didn't get a chance to get back on and tell you about this amazing one.  It's a skillet meal and who doesn't love the lack of dishes to be washed!

Bacon Cheeseburger Skillet - I'm in the minority on this in most instances, but bacon is not one of my favorite things to eat.  I can do it in moderation, but it is not I choose most of the time.  So this dinner was made with my family in mind - yep I'm that nice of a mom/wife 😍

The original recipe says to put it in a wrap or over lettuce, but I knew my family really wouldn't go for that, so I decided at the last minute to make some rotini noodles.  With that in mind I would make a slight modification.  I'll tell ya about that as we go through the recipe.  

The kids loved this meal so I'm sure I'll make it again because it was also super easy! Great for a weeknight when you don't have much time or you just don't really feel like cooking much!

Ingredients
  1. 1 lb lean ground turkey
  2. 4 slices bacon, coarsely chopped
  3. 2 tsp brown spicy mustard
  4. 2 tsp Worcestershire sauce
  5. 1 tsp garlic powder
  6. 1/3 cup minced onions
  7. 1 (14.5 oz) can diced tomatoes, drained
  8. 3/4-1 cup cheddar cheese, shredded
  9. Sea salt & pepper, to taste
  10. 6 oz tomato sauce *optional if you are using noodles
Here's what you do:
  1. In a 12″ skillet, cook bacon until done to your liking. Remove and dice the bacon into small pieces.
  2. Brown ground turkey, breaking it up as it browns.
  3. When turkey is brown, add all of the ingredients and mix well.
  4. Cover and let simmer on low for 10-15 minutes, stirring occasionally.
  5. Sprinkle cheese over meat, recover until melted.
  6. Serve over fresh lettuce, in a whole grain tortilla or over whole wheat noodles

Chocolate protein bars

This is one of my most favorite recipes that I have adapted to fit our families needs and make on a weekly basis.  It provides protein and carbs to keep you full and satisfied for the morning!   Our kids literally have this breakfast every day and if I don't have them made, the kids are quite upset. They call them chocolate bars but that's very deceiving because there's not really much chocolate in it! Cookie dough balls

I saw this picture of what looked like cookie dough on my friends facebook page - she said she made it with Shakeology!  It absolutely looked amazing in the bowl, just like cookie dough.  And then she rolled it into balls for a quick snack - or in my kids case, BREAKFAST 😊 I modified her recipe a little bit and according to my husband I need to modify it a little bit more.  I thought they were good and the kids scarfed them down.  I guess if you don't like coconut at all, then you need to modify it as well - I'll tell you how I intend to but I can't promise anything at this point!
