So excited!!

Hey Happy Friday!!  Friday's are my absolute favorite weekday because I only have to work until 12ish!!  I get to come home and do whatever I want until I go get the kids from school!  It's amazing!!  Most of the time I go to the grocery store, clean, workout or chat with some friends - but it's my choice and I can do whatever I want! :)

Yesterday I finished my latest workout program - 21 day fix extreme from Beachbody - heard of it? It is a fantastic workout because it has 7 different workouts to do weekly and it teaches you how to eat proper portions for your weight and activity level!  I love it and can see a lot of results from it when I am eating like I should...um, not this time....I just have a huge sweet tooth and sometimes it gets the best of me!  But I am learning to control it and have made huge strides from when I started 3 years ago!!

October 2016 (silly cat!)

I am going to keep going with 21 DFX until November 14 (only 2 weeks) and then I'm going to begin Core de Force!!  This is Beachbody's newest workout program AND I GOT ASKED TO DO A COACH TEST GROUP!!!  I am so excited!  This means no cheating...and you know what, Thanksgiving falls in the middle of these 30 days....yikes!  I can do it though!   I will stay strong and follow the nutrition plan.  Eeek!!


The workout is a Mixed Martial Arts format so it will be difficult for me because I know nothing about MMA and will be lost during the beginning phases I'm sure!  But when you confuse your body you get great results - so I'm all in and ready to rock it out!

Homemade Chicken Nuggets

I love chicken nuggets!!  When I used to go to McDonalds it was what I got probably 75% of the time!  They are just amazing.  And the sweet and sour dipping sauce...oh so good! 😋 But now that I don't eat at McDonalds anymore, I have to make them at home.  There are so many you can buy at the store - quick and easy to throw in the oven and they have all kinds of different shapes - dinosaurs, stars, hearts, probably whatever you wanted! But who knows what the heck is in those store bought ones....so I had to find a recipe that I could make at home.  I have come across many that I like but I always wanted them to be crispy and not soggy when I make them in the oven.  It has taken some time, but I think I have found the right combination!!  YES!! So here we go.  I hope you all enjoy them as much as we do! You will need: 4 chicken breasts 1 cup pickle juice (yes really) 1 cup flour paprika pepper 3 eggs 1 1/2 cups bread crumbs Directions: Cut up chicken into your d

Chocolate protein bars

This is one of my most favorite recipes that I have adapted to fit our families needs and make on a weekly basis.  It provides protein and carbs to keep you full and satisfied for the morning!   Our kids literally have this breakfast every day and if I don't have them made, the kids are quite upset. They call them chocolate bars but that's very deceiving because there's not really much chocolate in it! These take 10 minutes max to make and then time in the fridge to set.  1+ cup natural peanut butter (I like Skippy) 1 cup local honey (for allergy sakes!) 1 1/3 cup oatmeal 3 scoops chocolate protein powder (I use Orgain) 1 scoop chocolate Shakeology (if you don't have this, just do 5 scoops of protein powder) Then I dump in some flax seeds and chia seeds - not measured Heat peanut butter and honey on stove together.  Add in your other ingredients and mix well Spread in a container (I use a 9x13 Pyrex). Cookie dough balls

I saw this picture of what looked like cookie dough on my friends facebook page - she said she made it with Shakeology!  It absolutely looked amazing in the bowl, just like cookie dough.  And then she rolled it into balls for a quick snack - or in my kids case, BREAKFAST 😊 I modified her recipe a little bit and according to my husband I need to modify it a little bit more.  I thought they were good and the kids scarfed them down.  I guess if you don't like coconut at all, then you need to modify it as well - I'll tell you how I intend to but I can't promise anything at this point! Making these with Shakeology allows you to get 70+ amazing ingredients including superfoods, vitamins, protein, pre/probiotics, adaptogens, digestive enzymes....you know all that good for you stuff that most of us don't get on a daily basis and probably don't even know what it all is!  The way Shakeology is made though, the nutrients get delivered to you as a whole food (dried)
